Vineyard & Winemaking

In 2015, all Sauvignon Blanc grapes were harvested between early March until mid April at varying levels of ripeness, providing for an array of flavours and blending options. The fruit was crushed, pressed and quickly clarified to protect the Sauvignon Blanc aromatics before fermentation.

YEAST: Selected aromatic and textural yeast strains.

FERMENTATION: Cool, slow fermentation in stainless steel tanks to retain distinctive regional and varietal characteristics and ensure maximum retention of delicate flavours and aromatics. Soon after fermentation was completed the wine was bottled to capture its vibrancy and freshness.

REGION: Marlborough

VINEYARD: Fruit for this wine was sourced from a selection of vineyards throughout New Zealand spanning a range of different climates and soil types. Careful attention was paid to vine health and cropping levels to give the vines the best chance to optimize the season and develop intense flavours. The climate in New Zealand has high sunshine hours, but temperatures during the growing season are regulated by the cooling ocean influence.
